Tilman Fertitta’s five-star hotel, The Post Oak Hotel, is offering a special summer treat for guests and visitors. Starting this Friday, July 25, the hotel will introduce Navi’s, a limited-time pop-up cocktail bar. This unique experience is designed to offer something truly memorable for those who visit.
Navi’s is located discreetly near Stella’s Wine Bar and takes its name from Navidad, the beloved dog of the Fertitta family. Judith Piotrowski, the hotel’s director of bars and spirits, shared insights into the inspiration behind Navi’s with CultureMap. She explained that the team drew from the qualities people love about dogs—loyalty and unconditional love—and connected these ideas to the experience of visiting a bar.
“We wanted to take the ideas of loyalty and unconditional love and connect that to the same experience that a bar can give us,” she said. “These memories, these pieces of our lives that we want to hold onto them for as long as we could.”

The result is a carefully crafted, five-course tasting menu priced at $125, featuring cocktails paired with light bites created by The Post Oak’s culinary team. Each course offers a unique flavor profile and pairing, making it a must-try for any cocktail enthusiast.
The Tasting Menu: A Journey Through Flavors
The first course is The Green Triangle, made with vodka, peach yogurt, and absinthe, paired with a goat cheese tart. This drink sets the tone for the experience, combining sweet and savory elements in a refreshing way.
Next up is The Red Cloud, which features mezcal and grilled pineapple, paired with a birria empanada. The combination of smoky mezcal and the sweetness of grilled pineapple creates a bold and flavorful experience.
Piotrowski noted that the team took an unusual approach by creating the cocktails first and then asking the chefs to develop dishes that complemented them. This inversion of the usual process was a fun experiment and highlighted how well the team works together when they have strong relationships and mutual understanding.
Inspired by Travel and Innovation
The cocktails themselves are partially inspired by Piotrowski’s recent trip to France, where she observed bartenders using advanced techniques like clarification and lab equipment such as a Rotovap to create complex flavors. These methods allow for the creation of unique and intricate taste profiles that wouldn’t be possible with traditional mixing methods.
As expected from a premium experience, Navi’s also includes theatrical presentations. Piotrowski admitted that she enjoys a bit of flair and drama in her work.
“There will be some theatrics, because I’m a little theatrical,” she said with a laugh.
A Fleeting but Memorable Experience
Reservations for Navi’s will soon be available on the Post Oak Hotel website. For Houston’s cocktail lovers, this pop-up bar promises to be an unforgettable experience, especially since it will only be open until August 31.
Piotrowski reflected on the transient nature of the experience, noting that it’s similar to a memory.
“This thing is fleeting, just like a memory,” she said. “The bar is only here for a short amount of time. How do we make the best of the time we have? How do we create an experience that people will talk about even once its gone?”
