Step 1. Sauté the eggs in a pan for approximately 2 minutes, then transfer them to a bowl.
Step 2. Sauté the shrimp in the pan for one minute prior to transferring them into the bowl containing the eggs.
Step 3. Incorporate the vegetables, ginger, and garlic powder into the pan, then sauté for 2 to 3 minutes until they become soft.
Step 4. Add the remaining ingredients to the pan together with the shrimp and eggs, then cook until everything is fully done, about 1-2 minutes. Remove from heat and top with green onions. Serve and savor!
Tip: The initial cooking of the shrimp won’t fully cook them, so don’t set them aside. Be sure to return them to the pan with the other ingredients until they are completely cooked.

Ingredients
- 3 tablespoons butter, unsalted, divided
- 4 large eggs lightly beaten
- Salt and pepper to taste
- ¾ pounds shrimp, frozen, thawed, and chopped
- 1/3 cup peas frozen
- 1/3 cup carrots finely diced
- 3 tablespoons white onion, finely chopped
- 2 large green onions sliced, divided
- 2 teaspoons ginger, freshly chopped finely
- ¾ tsp garlic powder
- 4 cups of cooked rice that has been cooled
- 2 tablespoons toasted sesame oil
- 3 tablespoons tamari or coconut aminos
- Optional topping: Extra green onion, sliced
Directions
- Put one tablespoon of butter into a large skillet or wok that’s heated to medium-high temperature.
- Add the eggs and cook them, continuously stirring and chopping with a spatula until they are fully cooked, about 2 minutes. Move the eggs to a bowl and keep them aside.
- Add a second tablespoon of butter to the pan. Add the shrimp and cook while stirring continuously for one minute. Move the shrimp into the bowl containing the eggs. (The shrimp will not be fully cooked at this stage.)
- Add the remaining butter to the pan, along with the peas, carrots, onion, and the white part of the green onions. Include fresh ginger and garlic powder. Mix well and cook until the vegetables are tender but still firm, about 2-3 minutes.
- Add rice, sesame oil, tamari, and the green portion of onions to the pan, then stir to mix. Put the shrimp and eggs back into the skillet and cook, continuously stirring, until everything is heated through and all components are fully combined, taking about 1-2 minutes.
- Take off the heat and serve right away, garnished with more sliced green onions, if desired. Enjoy!
