Crispy Air-Fried Crumb Chicken: The Ultimate Aussie Delight

Ingredients


A 125g pack of garlic and herb butter

4 medium pieces of chicken breast fillet

2 cups panko breadcrumbs

¼ cup mayonnaise

500g green beans, steamed

Method


Step 1

Divide the butter into 4 equal portions. Chill for 30 minutes.

Step 2

In the meantime, position a chicken breast between two pieces of parchment paper, then gently pound it with a mallet until it reaches a thickness of about 1 centimeter. Transfer it to a dish and continue this process with the rest of the chicken breasts.


Step 3

Put the breadcrumbs into a wide dish. Add some salt and pepper for seasoning. Position a pat of butter at the center of every chicken breast. Bring the edges inward over the butter until you have created a compact roll. Use toothpicks to hold them securely closed. Coat all surfaces uniformly using mayonnaise before rolling completely in the breadcrumb mixture.


Step 4

Slightly coat a 7-litre air fryer basket with oil. Put the chicken inside the basket and spray it well. Cook at 180°C for 20-25 minutes until the chicken turns golden brown and is fully done. Take out the toothpicks from the chicken before serving.


Step 5

Serve with steamed green beans.
