Step 1.Thaw the puff pastry. Heat up the oven. Beat the cream and maple syrup to create a light and airy whipped cream and put it in the refrigerator. Prepare the egg wash and set it aside.

Step 2.Unroll the thawed puff pastry and cut it into 4 equal squares, placing them on a large baking sheet lined with parchment paper. Use a fork to poke holes in each pastry square and place them in the freezer while you prepare the apple filling.

Step 3.Sauté the apples and mix them with brown sugar, cinnamon, nutmeg, and ground cloves. Remove from heat and place a spoonful of the mixture in the center of each cold puff pastry square. Bring the corners toward the center to seal the pastry.

Step 4.Brush with the egg wash and sprinkle some cinnamon on top. Bake in the oven for 25 to 30 minutes, or until lightly golden. Remove and serve with maple whipped cream on top. Enjoy!

  • Let the puff pastry thaw in the fridge for a few hours or overnight. Move the top oven rack to the middle and heat the oven to 400°F.
  • In a big bowl, mix 1 pint of heavy cream using a handheld or immersion blender until the volume increases. Next, slowly pour maple syrup into the bowl and keep blending until the mixture becomes light and airy. Cover and refrigerate until you’re ready to use it. Make an egg wash by beating one egg yolk with water until fully mixed. Keep it aside.
  • Take the thawed puff pastry out of the refrigerator. Put the dough on a surface that’s lightly dusted with flour and roll it into an even square. Cut it into 4 equal parts and arrange them on a large baking sheet with raised edges that has been covered with parchment paper or a Silpat™ mat.
  • Poke the middle of each pastry square with a fork and put the baking sheet in the freezer while you get the apple mixture ready.
  • Melt the butter in a pan on medium heat. Add the apple slices and cook for 3-4 minutes until they become tender, stirring now and then. Mix in brown sugar, cinnamon, nutmeg, and ground cloves into the pan. Stir well, then take it off the heat and let it rest.
  • Take the pre-made puff pastry out of the freezer and place a quarter of the apple filling in the middle of each square. Bring each corner towards the center of the square to “seal” the pastry, but leave a few small gaps for ventilation. Apply an egg wash to the puff pastry and add more cinnamon, if you like.
